are derived from the plant Camellia sinensis, the most commonly used tea

plant, different varieties of Camellia sinensis are made by different
methods.
Camelia sinensis sinensis, a smaller-leaved variety native to China. This is most commonly used to make green tea, while black tea is usually made from a larger leafy plant that is typically grown in India. This is called Camellia sinensis assamica.

There are many different types of green tea produced in the world, including China, Japan, India, New Zealand and Hawaii, to name a few. But China and Japan are the two largest green tea producing and exporting countries in the world. Green tea is made from harvested withered leaves by heating, steaming (Japanese style), or pan-firing (Chinese style). This process stops the oxidation, so the leaves retain their delicate, fresh taste, green color.

While green tea is mostly used in Eastern countries, black tea is more commonly consumed in Western countries. The best known sweet tea, sun tea, iced tea is typically made from black tea. The production of black tea leaves involves an oxidation process. During the oxidation process, oxygen interacts with the cell walls of the tea leaves, causing the leaves to turn dark brown/black, hence the taste of the tea leaves is constantly changing during oxidation, adding fruity, malt and smoky flavors.
The tea leaves are processed in two ways. In the orthodox method, the tea leaves are harvested, withered and then twisted and rolled in different ways to make the leaves crush and start the oxidation process. When the proper oxidation is achieved, the leaves are roasted so that the oxidation is stopped.

The other, non-orthodox or Crush-Tear-Curl (CTC), is used to cut the leaves rather than wrap or roll them. This speeds up the oxidation time, giving the tea an even, strong, characteristic taste. Cut leaves are easier to filter into loose leaves than loose leaves made by the orthodox method, making them increasingly popular with consumers. Today, the three largest black tea producers are India, Sri Lanka and Africa. Increasingly popular types of black tea are Assam tea, Darjeeling tea, Ceylon tea and Kenyan tea.
